My stint at MARC was short-lived however as I was then offered an opportunity to build a chocolate café from the ground up in Jeddah, Saudi Arabia, an offer the adventurer in me couldn’t pass up.
I worked for about two and a half years in Jeddah, which was an eye-opening experience on both a personal and professional level for which I’m very grateful.
While I was there, I also managed to travel the world and learn from my heroes such as Stéphane Leroux, Stéphane Tréand, Scott Green, Franck Wenz and many more.
After those two and a half years, it was time for me to come back to Europe. My partner was finishing her studies in Ireland, so I followed suit.
I started working with Redmond Fine Foods as a technical advisor/demonstrator and continued my travels across the world in search of more skills leading me from Turkey to Las Vegas to learn from Cacao Barry ambassadors such as Melissa Coppel, Ramon Morato, J.M. Perruchon and many more.
In January 2018, Cacao Barry rewarded me with acceptance into the exclusive Chocolate Ambassadors Club.
In that year I was also part of the support team of Barry Johnson during the final stages of his World Chocolate Masters final preparation.
While still working with Redmond Fine Foods I now also teach masterclasses and do consultancy work across the globe.
For the future, I want to share my passion for pastry and chocolate with the world, and I hope to travel all the continents doing this!
