          Trehalose, the sugar you aren't using but should! Two and a half years ago I visited the Sosa Ingredients factory in Moià, Spain where I was introduced to a variety of interesting new ingredients and techniques. Trehalose was one of the ingredients I got excited about most. Initially I got excited by it’s technical properties in pastry but after researching this sugar more, I soon realised the benefits didn't stop there.
